Why compete against your rivals when you can specialise in certain lines and swap for things they make more of? It saves on waste and benefits the customers, especially when orders are coming thick and fast. 

Some lines you find you need to have. Things like individually packaged salads and cakes always sell well when they are available from takeaways. We are looking for people who will do this and especially make base sauces that just need the 'lumps' added. 

Throwing away good food at the end of a working day should never be a option. Storing it for the next day is also not great. Having someone to pick it up to package and freeze stops you losing money. Your name will be on the packaging, so they're doing your advertising for you.

Food outlets are constantly struggling for space and packaging is the number one enemy for that and buying enough to keep the costs down. Buying only certain pieces and swapping makes more sense.
